COCO-CHOCO BANANA MUG CAKE

Ready for some good news today?

I’m here to tell you that you can make yourself a homemade mini cake in less than 10 minutes. The most amazing thing about this recipe is that it doesn’t require any sugar, it’s gluten free, grain free and dairy free. As you all know our family is big on a healthy gluten free diet.

If you are not convinced about microwaves due to radiation exposure you can alternatively make this in a small toaster oven or in an air fryer with the baking option.

This recipe was created from scratch in my kitchen following an intense craving for something sweet but healthy. If you are trying out a healthy gluten free lifestyle, this recipe will not disappoint you.

Ingredients: 

  • 1/2 mashed banana

  • 1/3 cup of organic coconut flour

  • 1 egg

  • 1/2 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1 tsp dairy free milk

  • 1/2 tsp baking soda

  • Coconut flakes (for topping)

  • Vegan chocolate chunks (for topping)

Instructions:

  1. In a regular sized mug smash half a banana until pureed.

  2. Add 1/3 cup of coconut flour and start mixing batter.

  3. Add 1 egg and keep mixing

  4. Add 1 tsp dairy free milk (we use Trader Joes coconut milk with no preservatives).

  5. Add 1/2 tsp vanilla extract and 1/2 tsp cinnamon powder.

  6. Add 1/2 tsp of baking soda at the end and mix it all together.

  7. Even out mix with a spoon until flat and then add the toppings, in this case the coconut flakes and the chocolate chunks.

  8. Microwave: 2 minutes. Air fryer: on baking option 380 degrees for 7 minutes. Toaster oven: 380 degrees for 6 minutes.
